So this blog was kind of meant to be my diary, but a couple friends have come across it already because of course I'm internet-retarded and didn't know it would come up on gmail or blogger or anything. So I'm going to keep it more to myself; but if someone comes across it, that's okay. It might be boring to you.
Today I'm going to post pictures and recipes of my favorite meals/treats I've made or eaten this week (and probably will almost every week). Since I've been married, I've been more excited to try new recipes and have really found a love for cooking. I'm not a huge baker though...I'll leave that to Smart Cookie, which, yes, I got this week:
These are absolutely amazing cookies. I have the BIGGEST sweet tooth ever, which I know is weird since I'm a dental hygienist and all. But I don't care. It runs in my genes.
Last week I made a new recipe. I find most of my stuff on Pinterest, as this one was. It was a copy-cat Panda Express chow mein and an asian chicken and broccoli.
These were both super easy. For both, I made the sauces beforehand, cut all of the veggies, cooked the chicken and noodles, cooked the veggies, and added the sauce. Both the recipes are on my Pinterest food board. The only thing I might change is not as much ginger in the chow mein. My husband loves ginger, but I only like a hint of it, so I would cut that in half. Otherwise, I loved this meal! Easy, yummy, and pretty healthy.
I'm always hungry during the day because I see a lot of patients and go from about 7-1 without eating most of the time. I try to get snacks in between patients but it's hard to find something healthy to eat fast. It's easier to eat chips or crackers or peanut m&m's. One of my favorite power snacks to make are called energy bites. SO easy, and it lasts be throughout the week. I could eat them for breakfast, lunch, and dinner. And it satisfies my sweet tooth.
Again, found these on Pinterest. Oats, peanut butter, ground flaxseed, chocolate chips, coconut, and honey. Mix it all together and roll into little balls. I make about 20 with one batch.
Last recipe I'm sharing is from my sister-in-law, Julia. We visited them when we were home for Christmas in Seattle. Salsa chicken. You don't have to do anything because dun-du-du-duuuuun: Crockpot.
This right here, is my best friend. I really don't use it enough because I'm usually cooking on the stove. Salsa chicken is just putting in 3 chicken breasts into the crockpot, and adding a can of black beans and about 2 cups of salsa. I put in way more than 2 cups so it was a little more liquid-y. Next time I'll put less. I turned it on high for about 4 hours (since my chicken was frozen), then on warm until we ate. Simple. So simple.
Turned out amaaaazing. I love any type of taco.
Last thing I NEED to share is Chukar Cherries. One of my favorite things to do in Seattle is go to Pike Place Market mainly to get these bad boys...(and clam chowder).
These chocolate-covered cherries/nuts are from Prosser, WA (homeland to my husband's second love, Kellen Moore...Boise State's best QB) They are delish, and somehow feel healthier than they probably are because they're cherries. They are so good. You can order them online if you don't want to fly all the way to Washington.
